Gingerbread Cupcakes

Apologies for my lack of writing this past week, my life suddenly got super busy with Christmas activities! But now I'm back, with a super Christmassy recipe: Gingerbread Cupcakes. Can I just say that Zoe (Sugg) and I must be on the same wave length when it comes to Christmas baking ideas, haha. I'm going to stop saying 'Christmas' now and get into the post!...

Ingredients:

  • 150g or 2/3 cups butter
  • 150g or 2/3 cups soft brown sugar
  • 3 eggs
  • 150g or 2/3 cups self-raising flour
  • 1 tsp ground ginger
  • Half tsp ground cinnamon
  • pinch of freshly grated nutmeg (doesn't necessarily have to be fresh)
  • 1 tbsp milk

What I like about this recipe is that it doesn't contain treacle or molasses because not everyone has these to spare in their kitchen cupboard.

Method:

1) Preheat the oven to 180C / 160C fan / gas 4.

2) Cream together the butter and sugar until light and fluffy.

3) In one separate bowl, whisk together the eggs and in another sift together the flour and spices.

4) Gradually mix the eggs into the creamed butter and sugar alternating with the flour to stop the mix from curdling. Finally, stir through the milk.

5) Place 12 paper cupcake cases into a muffin tin and divide the mixture between them.

6) Bake for 15-20 minutes until golden and springy to the touch. Remove from the oven and cool on a wire rack.

7) For the frosting: while the cupcakes are cooking place 50 grams of the butter in a pan with the brown sugar and cook over a low heat until melted. Add 2 tablespoons of the milk and stir to form a thick glossy toffee sauce. Leave to one side to cool to room temperature.

8) In a large mixing bowl beat the butter until smooth, then start to sift in the icing sugar, stirring regularly. Add the toffee sauce and stir until thoroughly incorporated. Add a splash more of milk if the mixture seems too thick - the frosting should be light and creamy.

9) 8. Put the frosting in a piping bag and pipe onto the cupcakes.

10) I have personally decorated my cupcakes with these sprinkles from ASDA and mini gingerbread men from Sainsbury's! They look so sweet!

Clinique Dramatically Different Moisturising Lotion +

I'd been eyeing up this moisturiser for a while and after receiving a sample in Glamour magazine (the one with Tanya Burr on the cover) I realised how good it was at moisturising my skin. Therefore a couple of weeks ago I picked up a big bottle of the Clinique Dramatically Different Moisturising Lotion +.

This moisturiser isn't exactly the cheapest of them all:

50ml tube - £18
50ml bottle - £18
125ml bottle with cap - £29
125ml bottle with pump - £30

but I think it works wonders on my skin. I picked up the one which is for dry skin so that it is super nourishing on my face over the winter period. You only need a small about to do the job each morning so I believe this will last quite a long time.

The only thing I could fault about it, is the smell, it's not the nicest smelling moisturiser I've used - but I guess the smell goes after a while once it's set into your skin!

What moisturiser would you recommend?

10 DIY Christmas Decorations

I've recently been creating some of my own DIY Christmas gift ideas to share with you, but those are coming your way soon! For now I thought I'd share some other inspiration I found whilst searching through Pinterest (you can find my boards HERE)

1) First off I found these super cute pine cone Christmas trees. These look really easy to make so therefore would be ideal to make with children. If you'd like more information on how to make these click HERE!I ha

2) I LOVE these decorations, if I had the time I would totally make this. However, although I know the website I found these on is called DIY and Mag, I can't seem to find this garland on their site. Therefore, I can't find instructions on how to create it, though I'm sure somewhere on the internet there is something similar.

Create this DIY Christmas garland. This Christmas sewing craft will be a wonderful handmade Christmas decoration.:

3) This next idea looks super easy to re-create, I'm pretty sure if you raided your local craft store at this time of year you'll be able to find what you need. (Credit to Zomoc.com)

6) Creating pillows probably isn't something I'd personally do as they take quite a bit more effort than some of my other suggestions! However, I do love how these all look. Cappuccino Cake

The difference between a cappuccino and a coffee cake is that there's a hint of chocolate. I know quite a lot of people who don't like/drink coffee but really like coffee cake, so hopefully you all will enjoy this recipe!

Ingredients:

  • 250g softened butter (plus extra for greasing)
  • 280g self-raising flour
  • 250g golden caster sugar
  • 1/2tsp baking powder
  • 4 eggs
  • 150ml pot natural yoghurt
  • 1 tsp vanilla paste/extract
  • 1 tbsp cocoa powder (plus extra to dust)
  • 100ml strong coffee (made with 2 tbsp of coffee granules) - 2 teaspoons of this 100ml will be used for the icing.

Icing:

  • 200g icing suger
  • 100g unsalted butter
  • 2 teaspoons of strong coffee

Method:

  1. Heat oven to 180C/160C fan/gas 4. Grease a 20 x 30cm baking or roasting tin or a circle cake tin (like I used) and line with baking parchment. To make the sponge batter, beat the butter, flour, sugar, baking powder, eggs, yogurt, vanilla, cocoa and half the coffee in a large bowl with an electric whisk until lump-free. Spoon into the tin, then bake for 25-30 mins until golden and risen and a skewer poked in comes out clean. Drizzle with some of the remaining coffee.
  2. Whilst the cake is in the oven, mix together the icing ingredients.  Spread over the cooled cake (and add a layer in the middle if you'd like), dust with a little cocoa and scatter with the coffee beans or walnuts.
  3. I hope you enjoy this weeks recipe

    The Christmas Tag!

Is it too early to upload a Christmas Tag? I think not! Like many people, I absolutely LOVE Christmas so I thought I'd start getting in the spirit on my Blog also I fancied doing more of a chatty post today so that you could get to know me better. Can I just say - I'm sat listening the Michael Buble's Christmas Album whilst typing this post!

Q1) What's your favourite thing about Christmas?

The main thing I love about Christmas is the atmosphere. You know when you're out Christmas shopping, everywhere has got pretty lights and 'It's Beginning to Look A Lot Like Christmas' is playing in every shop? Everyone is happy (unless they've left their shopping till the last minute) and the atmosphere is just so warming.

Q2) What is your favourite Christmas movie/s?

If I had to pick one, It'd have to be Christmas With The Kranks! It never fails to put a smile on my face. With it also being my Dads favourite, it's nice to watch it with the family during the holidays.

Of course, there's also Elf! This reminds my of being at school just before we broke up for the holidays, we'd just watch Elf whilst exchanging presents and eating chocolate in lesson.

Q3) Real tree or fake tree?

We've always had a fake tree in our household, so that's the norm for me. Personally I prefer the look of a fake one - real ones always look a bit sparse of greenary.

Q4) Giving presents or receiving them?

Giving! I don't have many people I need to buy presents for but I really like finding the perfect present and seeing their reaction when they open it! However, I must say I love receiving presents because I love to be surprised.

Q5) Do you open your presents Christmas morning or evening?

I open my stocking first thing in the morning, I take it through to my parents room and sit on their bed after making a cup of coffee (I know I'm 18 but nothing will ever beat sitting on my parents bed first thing Christmas morning!) After opening our stockings we'll get ready for the day and usually go for a walk, then once we're back in the afternoon we'll open what's under the tree.

    Q6) What tops your tree?

We have a rather old looking angel which I'm pretty sure my parents bought before I was born but I can't imagine buying a modern looking star, it wouldn't be the same.

Q7) As a kid what was the one (crazy, wild, extravagant) gift you always asked for but never received?

Every year from the age of about 8 to 15 I asked for a rabbit! I allowed to have a hamster (so I've owned three over time) but never a rabbit haha. I'm very grateful to have Willow (the family dog) instead.

Q8) Handmade Christmas cards or bought?

I love the idea of creating handmade Christmas cards however I really don't have the time to - so bought it is!

Q9) What's your favourite Christmas food?

I don't know if this counts as a Christmas food but...pigs in blankets. You can have sausages wrapped in bacon at any time of the year but we only seem to have them at Christmas with out roast dinner! I also love a warm mince pie with ice cream + gingerbread lattes. Mmmm I'm getting hungry now.

Q10) Do you have any Christmas Eve traditions?

Yes! There's a small church in our village that holds a service in the afternoon which we attend - they always tell the story of the birth of Jesus and include everyone throughout by singing carols. It's so lovely seeing all the children getting excited. We then go out for dinner and to the cinema!

I really hope you enjoyed this chatty post this evening + enjoy doing it yourself even more :) I'm tagging the following people:

So there you have it!  Even if you're not on the list, I tag YOU to do this :)  Don't forget to link back to me so everyone can see where you found the tag :)

    Burt's Bees Christmas Gift

Hey guys, I have a different post for you today. This is a Christmas gift idea for those who love to keep their skin nourished. For £9.99 it comes with a hand cream and two lip balms which are super good quality.

    I love the packaging design!

The two lip balms are 'Honey' and 'Peppermint with vitamin E' - super nourishing with no added colour. I like to use these before I apply my lip pencil/lipstick to keep my lips healthy and to make application easier.

At this time of year it's key to keep moisturised. This hand cream is AMAZING at doing its job, my hands feel super soft after application. Unlike a lot of hand moisturisers, this soaks into the skin super quickly so your hands don't have that horrible claggy feeling afterwards.

The smell isn't quite so amazing because it's natural however that's a sacrifice I'm willing to pay as it does its job so well!

I hope you enjoyed my first Christmas gift idea!

    My Favourite Autumn Nail Varnishes

    Hey guys!

Thought I'd do more of a beauty post today (as you can probably tell) Below are a selection of nail polishes that I like to wear at this time of the year. Do you have a favourite autumnal nail varnish? Leave your comments below!

    1) The perfect nudey pink.

As you can tell by this post, Barry M are my favourite nail polishes. The first is 357 Ballerina which is a really nice pink, it's more on the girly side but not too bright.

And the second is by Collection - Antique Rose 12 - which is less pink and more of a nude.

    2) The berries

The first is 273 Raspberry - the name explains what the colour is like. Perfect for this time of year.

'Crush' 333 is a very similar shade however it is Matte.

I love the look of white nails (Matt White 66), it's a way to brighten up your look whilst not being colourful which could look summery. I chose to apply a coat of gold nail polish to my ring fingers just to make it look a bit more interesting. White also goes with 98% of your outfits!

    3) Being bright without looking Summery

    4) Sticking to the dark side

On the other end of the spectrum than white , you could choose a darker shade.

Above is 47 Black by Barry M and below is 349 Espresso which is also black but in matte (dependant on your own personal preference)

Last up is a shade from Orly called 'Steel My Heart' (not 'Steel my Girl' from One Direction) a shiny greyish silver. Perfect for the party season and looking sophisticated.

I hope you enjoyed this post!
